New recipes!

Last night I decided to try making a new side dish for dinner.  I'm so tired of having the same old side dishes, and main courses for that matter, so I turned to Pinterest.  I haven't been on Pinterest very long nor have I really learned how to use it but I did find a very nifty recipe that looked yummy and best of all, healthy, so I decided to try it out.   My true test is whether Bryan likes it or not.  There are some things that I make that are a huge hit and end up being biweekly staples in our dinner menu and then there are some things that he won't even finish because he hates it! He liked this side dish but his only comment was that it didn't "go" with the main dish or the other side dish, which I agree, but they all sounded really good so oh well.

Main dish:  Grilled Kikkoman Teriyaki Salmon (best if using this exact marinade) Success!

Side dish: Corn salsa: boiled corn (removed from the cob), chopped tomato, chopped skinless cucumber, minced jalapeno, splash of olive oil, balsamic vinegar.  Fail!  Reason:  I forgot to remove at least 1/2 of the jalapeno seeds so it was way too spicy for me and even Bryan. I've made this recipe before and it was a smash hit but forgot to keep the recipe so I am only going on memory.

Side dish: Zuc-canoes (reason for the post):  see link below.  SUCCESS!!! This was a success because it was so fresh and healthy and didn't make you feel gross after eating it.  Its a great summer side dish.  I made a few changes, as every cook does.  I grilled the zuc-canoe shells and used red wine vinegar instead of clear vinegar, red onions in place of shallots, roma tomatoes instead of cherry, and dried basil because thats what I had at home!  Another great thing about this dish is the "stuffing" would be great on salads or just by itself.
